Can you do a PhD in a project that's not really related to yours? For instance, I studied Human Anatomy, could I do a PhD in Molecular Science?

It's possible to move to another topic aslong as it in the same broad field and you have a good grasp of the basics.

If you can justify the transition and how you arrived to the idea, then why not. You can also approach it as a transdisciplinary research.
